This is my go-to book for baking! I have not yet met a recipe i didn't like. I will usually substitute Guar Gum for Xanthan Gum as my son does not like the taste of Xanthan and occasionally substitute other flour blends if i have them around, but otherwise just follow the recipe. I found this book at the library and quickly decided that i needed to have it around all the time.

This is the first recipe for a vegan cracker that I have found (Motza made from potatoe flour and ground flaxseeds).

I have checked out so many gluten-free cookbooks from OPL and haven't found anything that comes remotely close to producing the results that Pascal's book does. Everything I bake, even when I make minor substitutions, has been absolutely wonderful. It was such a great find I bought a copy to keep myself ... and that's really something!

This book has gluten and allergy free food that is delicious. Many recipes for interesting goodies. It is a relief to find something like this for my family.

while it is lacking in eggs and milk... it has a wide variety of other things I'm allergic to... like rice and potatoes. bummer.
